And the taste is just right! Not so lemony it makes your mouth pucker. Perfect to go with rice, buttered noodles, angel hair pasta, or mashed potatoes.

In Canadian- and British-Chinese cuisine, it usually consists of pieces of chicken meat that are sautéed or battered and deep-fried and coated with a thick, sweet lemon-flavored sauce. However, my version is a lighter, healthier take on this classic, focusing on fresh, vibrant flavors that complement the natural taste of the chicken without overpowering it.

  • 1/4 cup extra virgin olive oil
  • 4-5 cloves garlic, grated
  • 1/3 cup honey

Instructions:

  1. Prepare the Marinade: In a bowl, combine the juice and zest of the lemon, thyme, rosemary, sea salt, ground pepper, extra virgin olive oil, grated garlic, and honey. Mix well to combine.
  2. Marinate the Chicken: Place the chicken breast fillets in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces are well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for a more intense flavor.
  3. Preheat the Oven: Preheat your oven to 375°F (190°C).
