BINATOG - Boiled Hominy with Shredded Coconut / Boiled Dried White Corn Kernel

And this is one of my favorite miryenda. Everytime na maririnig ko na ang sigaw ni Manong magbibinatog. Nagmamadali na akong dumungaw sa bintana para sigawan siya na: "Manong, pabili ng binatog!" That is the technique, you have to call him first before ka na maghanap ng barya or humingi sa nanay mo nagpambili. Or else nasa kabilang kanto na 'sya at di mo na maabutan. Magkalahi sila ni manong mag-tataho nag-kakapag-teleport agad sa kabilang kanto. ha ha ha! 

Usually binatog is peddled (nilalako) from house to house in large metal tins by manong magbibinatog na nakabisikleta ( riding a bicycle). But nowadays seldom are selling or peddling binatog. 

To make binatog, the corn kernels are first boiled until tender, then drained and mixed with grated coconut, salt, and sugar (if desired). Some variations also add butter or margarine for added richness. The mixture is then served in a small paper or plastic bag, often with a wooden spoon for easy eating.

Binatog is a simple yet satisfying snack that is enjoyed by many Filipinos. It is a great source of carbohydrates and dietary fiber, making it a filling and healthy option for a quick snack.


So for those who are missing or wondering how it is made. Here is the tutorial on how I made mine. The downside is it will take you FOUR hours to cook it so you need patience.

But I will show you how to make it half of the time it is usually consumed.

Note: Dried White Corn Kernel that I used in this blog and video is nixtamalized meaning it is already soaked and cooked in an alkaline solution, so I skip the soaking in limewater. (apog)

 Here is a simple recipe for making BINATOG (Boiled White Corn Kernel / Hominy):

Ingredients: 
  • 1 cup of dried white corn kernel (hominy), nixtamalized
  • 5 cups + 2 cups of water total of 7 cups or 1.75 liters
  • shredded/grated matured coconut (niyog)
  • cheddar cheese
  • butter or margarine
  • condensed milk

Procedure:


1. Rinse 1 cup of dried white corn kernel (hominy) with running water.

2. In a pot add 1 cup dried white corn kernel (hominy) and 5 cups water.

3. Set the stove to high heat and when it begins to boil lower the flame to low heat and let it boil for 2 hours. Every 30 minutes stir the corn kernels to prevent them from sticking. Add 2 cups of water if necessary.

4. If you will use a pressured cooker add 7 cups of water and cook it for approximately 1 hour.

5. The corn kernels are ready when they are puffed up just like popcorn.

6. Topped it with freshly shredded matured coconut (niyog), cheddar cheese, margarine or butter, and condensed milk just before serving.

Enjoy your homemade binatog as a snack or light meal!

Note: The amount of shredded/grated coconut (niyog), cheddar cheese, butter, margarine, and condensed milk depends on how much binatog you will be serving. If condensed milk is not available you can also use evaporated milk or powdered milk and add sugar to your liking.
