Growing up, the preparation of Pork Hamonado Roll was a cherished family tradition. I remember my great-grandmother and grandmother bustling in the kitchen, their laughter and chitchat filling the air as they meticulously prepared the rolls ahead of our New Year's family reunion. The kitchen would be a hive of activity, with the aroma of marinated pork wafting through the house, mingling with the scent of star anise and pineapple. These moments of togetherness, punctuated by shared stories and the rhythmic chopping of ingredients, are some of my most treasured memories. Even now, the thought of those joyful preparations brings a tear to my eye, as I reminisce about the love and laughter that went into making each Hamonado Roll.

- 1 kilo pork chop (3 pieces) sliced thin like tapa (you can also use tenderloin)
- 2 tbsp sea salt
- 2-3 drops Worcestershire sauce
- 1 tsp ground black pepper
- 3/4 cup pineapple juice
- 1/3 cup brown sugar
- 3-4 pieces star anise
- 1 cup water
- 2 pieces Hungarian sausage
- 2 pieces regular hotdog (red)
- 1/4 cup water
- 1 tsp annatto seeds
- 1 tbsp soy sauce
- 1 1/2 tbsp cornstarch
- 1/2 cup pineapple tidbits
- Kitchen twine
Instructions:
1. Marinate the Pork:
- Lay the thinly sliced pork chops flat and sprinkle with sea salt and ground black pepper.
- Drizzle the Worcestershire sauce over the pork slices.
- In a bowl, mix pineapple juice and brown sugar until the sugar is dissolved. Pour this mixture over the pork, ensuring all pieces are well-coated.
- Add the star anise to the marinade.
- Cover and marinate in the refrigerator for at least 6 hours, preferably overnight.
2. Prepare the Filling:
- Slice the Hungarian sausages and hotdogs lengthwise.
- Lay the marinated pork slices flat on a clean surface. Place a piece of Hungarian sausage and hotdog on each slice, then roll the pork tightly around the filling.
- Secure the rolls with kitchen twine to keep them intact during cooking.
3. Cook the Pork Rolls:
- In a large pot or deep skillet, heat 1 cup of water and add the annatto seeds. Simmer until the water turns a rich red color, then strain and discard the seeds.
- Add the pork rolls to the pot along with the soy sauce. Pour in the annatto water.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the pork is tender.
- In a small bowl, mix the cornstarch with 1/4 cup of water to create a slurry. Gradually stir this into the pot to thicken the sauce.
- Add the pineapple tidbits and cook for another 10 minutes, allowing the flavors to meld.
4. Serve:
- Remove the kitchen twine from the pork rolls before serving.
- Arrange the Pork Hamonado Rolls on a platter, spooning the sauce and pineapple tidbits over the top.
