- 20g unsalted butter
- 15g squid ink (cuttlefish ink)

- 1 pc. egg white
- Sesame seeds (for sprinkling)
Instructions:
1. Prepare the Yudane Dough:- In a small bowl, mix 50g of bread flour with 50g of boiling water.
- Stir until it forms a sticky dough.
- Cover with plastic wrap and let it cool to room temperature. You can prepare this the night before and store it in the refrigerator.
- In a large mixing bowl, combine 250g of bread flour, 4g of instant dry yeast, 4g of sea salt, and 20g of sugar.
- Add the yudane dough, 130g of cold water, 1 egg yolk, and 15g of squid ink to the dry ingredients.
- Mix until the dough starts to come together.
- Knead the dough for about 10 minutes until it becomes smooth and elastic.
- Add 20g of unsalted butter and continue kneading until fully incorporated and the dough is shiny and smooth.
- Place the dough in a lightly greased bowl, cover it with a damp cloth or plastic wrap.
- Let it proof in a warm place for about 1 to 1.5 hours, or until it doubles in size.
- Punch down the dough to release the air.
- Divide the dough into equal portions (about 60-70g each) and shape them into smooth balls.
- Place the dough balls onto a baking tray lined with parchment paper.
