- 3 cups coconut milk
- 1 cup fresh milk
- 1/3 cup sugar
- 1 cup whole-kernel corn (canned)
- 3/4 cup cornstarch
- 1/2 cup corn water
For toppings:
- 1/3 cup desiccated coconut
Instructions:
Here are the steps to make Maja Blanca:
1. In a small pot, combine the coconut milk, fresh milk, and sugar. Stir the mixture until well combined and the sugar is completely dissolved. Bring to a low boil in medium-low heat.
2. Add the canned whole-kernel corn and simmer for another 7 minutes.
3. In a separate bowl, mix the cornstarch and corn water until the cornstarch dissolves.4. Add the cornstarch mixture to the small pot with the milk mixture. Stir the mixture continuously over low heat until it thickens.
5. Pour the mixture into a greased dish or mold. Use a flat spatula to evenly flatten the mixture.
6. Let the Maja Blanca cool and set it in the refrigerator for at least an hour.
7. For the toppings. In a small frying pan, toast the desiccated coconut on medium-low heat so you can easily control the browning.
8. Constantly stir and shake the desiccated coconut to give it an even color. Once golden brown, do not leave it in the pan even with the heat turned off, as it will continue to toast and could burn.
9. Cut into squares and serve chilled.
10. Sprinkle the toasted grated coconut over the top of the Maja Blanca.
