Here is the recipe for the Boba milk tea donuts:

Ingredients:


For the boba:

  • 1 1/2 cup tapioca pearl
  • 5 cups water
  • 1/4 cup brown sugar
  • 6 egg yolks
  • 90 g sugar
  • 40 g all-purpose flour
  • 250ml milk
  • 2 tea bags Lipton Yellow Label Tea
  • 150ml warm water
For the dough:
  • 300 g bread flour
  • 100 g all-purpose flour
  • 40 g buttermilk powder
  • 2 eggs + water = total of 250ml liquid
  • 60 g sugar
  • 5 g instant yeast
  • 5 g sea salt
  • 4 g bread improver
  • 40 g unsalted butter
2. Add the boba pearls to the boiling water and stir gently.
3. Let the boba cook for about 5-7 minutes or until they float to the top.
4. Turn off the heat and let the boba rest for another 2-3 minutes.
5. Drain the boba and rinse them with cold water to remove the excess starch.
6. In a separate pot, mix 1/4 cup of sugar with 1/4 cup of water and heat until the sugar dissolves.
7. Add the cooked boba to the sugar syrup and let them soak for at least 15 minutes.
Serve the boba with your favorite tea or fruit juice.

For the cream custard:

Instructions for boba or tapioca pearl:

1. Bring the water to a boil in a medium-sized pot.

Note: It's essential to use the right ratio of boba to water to ensure that the pearls cook evenly. It's also important to keep an eye on the boba while cooking to prevent them from overcooking or sticking to each other.

Instructions for custard cream:

1. In a medium-sized saucepan, heat the milk and vanilla extract over medium heat until it begins to steam.

2. In a separate bowl, whisk together the egg yolks, sugar, and cornstarch until the mixture is smooth and creamy.

3. Gradually pour the hot milk into the egg yolk mixture while whisking continuously.

4. Pour the mixture back into the saucepan and cook over medium heat, whisking constantly, until the custard thickens and coats the back of a spoon. This should take about 5-7 minutes.

5. Remove the saucepan from the heat and transfer the custard to a bowl.

6. Cover the surface of the custard with plastic wrap to prevent skin from forming.

7. Let the custard cool to room temperature before using it as a filling or topping.

Instructions for donuts:

1. In a large bowl, whisk together the flour, sugar, yeast, salt, and bread improver.

2. In a separate bowl, whisk together the melted butter, warmed milk, and eggs.

3. Pour the wet ingredients into the dry ingredients and stir until a dough forms.

4. Turn the dough out onto a lightly floured surface and knead for 5-8 minutes or until the dough is smooth and elastic.

5. Place the dough in a greased bowl, cover it with a damp towel, and let it rise in a warm, draft-free place for about 1 hour or until it has doubled in size.

6. Punch down the dough and turn it out onto a lightly floured surface.

7. Roll the dough out and divide it into 50-55 grams each.

8. Roll into small balls and place donuts on a lightly floured surface and let them rise for another 10 minutes.

9. Flatten the dough and fill the dough with boba or tapioca pearls in the center. Gently the sides of the dough form a ball. Rise for another 40 minutes.

10. Heat about 3 inches of vegetable oil in a deep skillet or Dutch oven over medium-high heat until it reaches 350°F (160-175°C).

11. Fry the donuts in batches, cooking them for about 1-2 minutes on each side or until they are golden brown and cooked through.

12. Use a slotted spoon or spider strainer to remove the fried donuts from the oil and place them on a wire rack to cool slightly.

13. Pour the milk tea custard mixture into a piping bag. Insert the cream into each donut.

14. Sprinkle sugar on one side of the donut and use a kitchen torch to burn the sugar.
